- Pumpkin (determine the amount, according to the number of people)
- Olive oil (depends on the amount of pumpkin, don’t use too much oil though :))
- Salt, pepper, paprika, thyme
- 2 cloves of garlic (grated)

First, we cut our zucchini thinly, like apple slices. You can also cut it into cubes if you want, but be careful not to be too thick.
In a deep bowl, mix the olive oil, garlic and spices well and blend the zucchini in it. If you wish, you can make the sauce a little more and add potatoes or green peppers and mix it. I just made peppers with zucchini.
We will cook it in the oven at 200 degrees until it is soft. It took me like 25 minutes. Maybe you can cook faster or later, check it.
We loved its taste, it reminds me of potatoes, but it is healthier than potatoes, so it is my choice in pumpkin season from now on.
If you use less olive oil, it will be suitable for diet or healthy eating, but it is worth a try since my wife who does not eat healthy also likes it 🙂
