Ingredients for Eggplant (Aydın Region) Recipe
- 4 belts of eggplant
- 1 bowl of cottage cheese or cottage cheese
- 2 eggs
- 3 sprigs of parsley
- 1 sprig of spring onion

Recipe for Eggplant (Aydın Region)
After washing the eggplants, peel the variegated. Split it in half. Cut each section lengthwise. until 1 cm from the bottom. Soak the eggplants in salted water so that they do not darken. In the meantime, for the filling, break the egg into the precipitate. Add finely chopped parsley and fresh onion and mix well. Carefully squeeze 1 teaspoon of the stuffing into the eggplant. Beat the other egg with a little salt. After dipping the stuffed eggplants in eggs, fry them in hot oil on both sides. Serve with lots of parsley leaves.
If you fry in hot oil, the eggplant will not absorb oil.
If you are going to use cheese, it should not be oily, it will melt and disperse while frying.
