How to make Bursa Kebab?
- For the pita, separate the egg yolk from the white. Dissolve the yeast in lukewarm water and let stand until it swells. Sift the flour into the dough mixing bowl and open the middle like a pool.
- Add yeast water, egg white, sugar, olive oil and salt and knead. Cover it with a damp cloth and leave it until it bubbles. Divide the dough into 4 equal parts.
- Take the pieces on a floured surface and roll them out with a rolling pin to form a pita. Place the dough on a greased baking tray and brush with egg yolk.
- Bake in a preheated 180 degree oven until golden brown. Cut the meat into thin strips and fry in olive oil.
- Add the lemon juice and crushed garlic and sauté until the broth is absorbed. Add hot water and black pepper and close the lid of the pan.
- Cook until the meat is very tender. Add the thyme and salt and remove from the heat. For the sauce, melt the butter in the pan.
- Add hot water, tomato paste and pepper paste and cook on low heat for 5 minutes. Beat the yogurt in a separate bowl.
- Cut the pitas into square pieces and put them on serving plates. Pour the sauce over them. Divide the meat and pour the yogurt on it.
- Garnish with lightly roasted green peppers and tomatoes in the oven and serve. Enjoy your meal.
