Peel the eggplants, cut them into rounds, not too thick, and leave them in hot salted water for 10-15 minutes. Wash the zucchini and cut them in the same way. Drain the eggplants and press the excess water with a paper towel. We heat the oil in the pan, add the eggplants and zucchini, salt and pepper to the egg we beat with a fork, then flour, and finally breadcrumbs and fry.
