We chop the eggplants and put them in salted water to remove the bitterness. We throw our meat in the pressure cooker and cook it slowly until the water is gone. While the meat is cooking, put the onion and pepper on a plate; Peel the tomato and cut it into a separate plate. We put a little salt on them all. Throw the tomato paste into the tomato, add 3 tablespoons of water and mix. We take the eggplants out of the salt water and wash them. We pour a little oil on the cooked meat and add a little salt. We spread the eggplants on the meat, onions and peppers on top of that, and then our tomato paste mixture on it. We put a little more salt on it. (You can tilt the pan to look at the salt and taste the water coming from it and adjust the amount of salt accordingly. There is no cure for it whether it is salty or not salty:) Then we close the lid of our pressure cooker and cook for 12 minutes after the pressure cooker starts to beep. You can use garlic upon request, I didn’t use it. If you are not going to cook with pressure, the cooking time will be longer, but the flavor is the same. Enjoy your meal.
