Ingredients for the Famous Malatya Sour Meatballs Recipe

- 2 cups bulgur for meatballs (halved, finely ground, if available)
- 1 glass of hot water (for soaking our bulgur)
- 1 kg washed chopped spinach
- 1 medium onion
- 1 tablespoon of tomato paste
- 1 tablespoon of chili paste
- 2 tablespoons of plum syrup (or lemon)
- 2 spoonful butter
- enough olive oil
- 2 cups boiled black or green (large) lentils
- 2 liters of boiled water
Making the Famous Malatya Sour Meatballs Recipe
First, let’s make our meatballs. Let’s soak 2 glasses of bulgur with 1 glass of hot water and let it sit for half an hour, then knead our dough, cut off chickpea-sized pieces and roll them with our hands (while doing this, wet your palms with water so that the meatballs do not stick) and fry our oil and finely chopped onions in a large saucepan until they turn pink. Let’s add our tomato paste, and after frying our tomato paste, let’s add 2 liters of water and let it boil.
Let’s add our green lentils into our boiling tomato paste water and cook for about half an hour. After making sure that our lentils are cooked, let’s slowly throw our meatballs and cook for 10 more minutes, then add our sour and chopped spinach, cook for 5-10 more minutes and turn off the stove.
