  • 1 cup zucchini grated
  • 1-2 cloves of garlic (finely grated)
  • 1/3 cup breadcrumbs (or breadcrumbs)
  • 1/4 cup aged cheddar cheese
  • 1 large egg
  • 2 tablespoons of spring onions (Chopped)
  • 1 tablespoon of parsley (Chopped)
  • 1 teaspoon fresh basil (Chopped or 1/2 teaspoon dried basil)
  • 1 teaspoon fresh thyme (Chopped or 1/2 teaspoon dried thyme)
  • 1 pinch of salt and pepper

for service

  • Tomato sauce or ketchup

How to Make Garlic Pumpkin Balls

  • Squeeze the juice of the zucchini with your hands and take it on a paper towel to absorb the water thoroughly.
  • Add grated zucchini, garlic, egg, breadcrumbs, parmesan, spring onion, parsley, basil, thyme, salt and pepper to a medium bowl and mix well.
  • Take a tablespoon of the mixture, make small balls in your palm and place them on a baking tray lined with greaseproof paper.
  • Bake in a preheated oven at 200 degrees for 15-20 minutes until golden. Remove from oven and serve with tomato sauce.
