Ingredients for Lol Recipe (Local)

  • 2 cups of bulgur wheat
  • 2 cups flour
  • 1 egg white (to be brushed on the yolk)
  • Half a pack of baking powder
  • half glass of water
  • 1 teaspoon salt

For the above

  • 1 large bowl of strained yoghurt with garlic
  • Salt
  • Half a pack of butter

Lol Recipe (Local) Preparation

Today I have a local recipe that my mother made when we were little. In the original recipe, the suk (Cökelek drying) made by my Deniz friend is used. In our region, cottage cheese is dried simply, without seasoning, and then melted and used. Those who can’t find surk can also use garlic yoghurt. Now let’s move on to our recipe.
2 glasses of bulgur with rice is soaked with very little warm water. Then flour, salt, egg yolk and baking powder are added. Slowly knead with water. We straighten this dough by pressing it on the greased tray with our hands and bake it in the oven at 200 degrees until golden brown. When it comes out of the oven, we wrap it in a clean and wet kitchen cloth to soften it while it is hot. Then we chop it into small pieces by hand. We line up the edges of a round tray as in the picture. We put the soft parts of the bread in the middle space. Then we dilute the strained yoghurt with half a glass of water, add crushed garlic and salt, and pour it on the sides of the bread on the tray, stirring constantly until it is hot on the stove. Melt the butter in the pan and pour it into the soft part in the middle. We’re going to show some of them to the yoghurt section. There should be a sizzling sound from the oil while pouring.
