This recipe is a mucver recipe inspired by Ottolenghi’s leek meatball recipe, which I love very much.
In this recipe, because the egg white is beaten beforehand and baking powder is used, it becomes a very fluffy and soft mucver.
My daughter, who doesn’t like leeks, loves this pastry.
Ingredients for Leek Micveri Recipe
- 500 g leeks – Quartered lengthwise and chopped 1cm.
- 1 onion – finely chopped
- 1 green pepper – optionally hot or sweet pepper
- Half a bunch of parsley
- 1 teaspoon of coriander powder
- 1 teaspoon cumin
- 1/2 (half) teaspoon of Indian saffron (turmeric)
- 1/2 (half) teaspoon of cinnamon
- 1/2 (half) teaspoon of salt
- 1 egg white
- 1/2 (half) cup of white flour
- 1 teaspoon baking powder
- 1 egg
- 3/4 (one half + one quarter) glass of milk
- 55 g butter – melted

Leek Micveri Recipe
Cook the chopped leeks and onions in 2-3 tablespoons of olive or flower oil over medium heat for 15 minutes, stirring occasionally.
After turning off the heat, add the chopped pepper and parsley to the pan with the leeks and leave to cool.
In a bowl, beat the egg white with a mixer for 1-2 minutes until it reaches the consistency in the photo.
In another bowl, mix the flour, baking powder, milk and butter.
Add the leeks and spices (coriander powder, cumin, cinnamon, castor saffron) to the bowl with the egg white, but do not mix.
Transfer the flour mixture you prepared to the container with the vegetables.
Mix everything slowly with a spoon, being careful not to let the air out of the beaten egg whites.
Heat the flower oil in the pan and slowly drop the leek mixture into the heated oil with a tablespoon.
Turn the mucver when the underside is browned. Depending on the setting of the fire, this may take between 30 seconds and 1 minute, the best thing to do is to look underneath and check if it is red.
Place the fried muffins on a paper towel to drain the oil. Transfer the drained meatballs to another plate and fry all the ingredients in the same way using clean paper towels.
Serve hot with salad and optionally with garlic or plain yogurt.
