Ingredients for Poutine

  • 6-8 potatoes, peeled
  • 1 tablespoon vegetable oil, plus more for frying
  • 1 shallot, chopped
  • 1 small clove of garlic, minced
  • 460 ml chicken stock
  • 460 ml broth
  • 2 tablespoons of ketchup
  • 1 tablespoon of apple cider vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons of unsalted butter
  • 2 tablespoons of flour
  • 1 teaspoon of black pepper
  • Salt and freshly ground black pepper
  • 1 cup cheddar cheese
  • 1 cup of cottage cheese

How to Make Poutine

  • Cut the potatoes lengthwise into sticks. Let it sit for at least 1 hour in a bowl of cold water to release its starch.
  • Drain the potatoes and dry thoroughly.
  • Start by making the sauce. Heat the oil in a saucepan over medium heat. Fry the shallots and garlic. Add the chicken stock, broth, ketchup, vinegar, black pepper, and Worcestershire sauce and bring to a boil.
  • Meanwhile, melt the butter in a separate pan and add the flour and fry it until it turns slightly colored and fragrant. Whisk into the sauce mixture and cook for 20 minutes.
  • Season the sauce with salt and pepper to keep it warm.
  • Line a double layer of paper towels on a tray. Take the oil in a deep frying pan and wait for it to heat up to 180 degrees. Fry the potatoes in several batches until golden brown. Remove the fried potatoes on a paper towel.
  • While the potatoes are still hot, season with salt and desired seasoning.
  • Strain the sauce, drizzle the sauce and cheese over the potatoes and serve while hot. Enjoy your meal.
