Ingredients for Roasted Eggplant

  • 4 medium eggplants
  • 1 large onion
  • 2 capsicum peppers
  • 5 cloves of garlic
  • 1 tablespoon tomato paste
  • 3 tomatoes
  • Paprika, thyme, salt
  • 2 tablespoons of olive oil
  • 1 pinch of parsley

Roasted Eggplant Recipe

We peel the eggplants as in the picture and keep them in salt water. We take our onion, garlic and oil in our pot and fry it lightly on low heat. Chop our capia pepper and add it to it. When it turns pink, we add our tomato paste. Mix and add our eggplants. Add a glass of hot water to it and let it cook on low heat. When our eggplants are a little roasted, we add our tomatoes. Add 1 teaspoon of salt and spices on it. You can increase it if you want. Our dish is about to be cooked, we chop a handful of parsley finely and add it to it and turn off the stove. I don’t cook parsley because I like green, it releases itself with its heat. You can roast ground beef and serve it together. That’s what I’m doing, bon appetit.
