Ingredients for Rice with Lentils and Fried Onions and Baked Fennel
- 200 g of American rice
- 75 g boiled green lentils
- 1 fennel root
- 1 medium onion
- 1 clove of garlic, crushed
- 2 teaspoons of cumin
- Olive oil
- Salt
How to Make Baked Fennel with Lentil and Fried Onion Rice?
- Slice the root fennel thinly and place on a baking tray lined with greaseproof paper. Add garlic, salt and olive oil and mix. Bake in a preheated 180 degree oven for 25 minutes.
- Wash and drain the rice. In a non-stick saucepan, heat 2 tablespoons of olive oil and add the rice and a teaspoon of salt and cumin.
- Stir fry the rice for a couple of minutes. Add 400 ml of hot water and mix. Close the lid and cook on medium-low heat until the water is absorbed. Remove from the stove and rest for 15 minutes.
- Finely chop the onion and fry it in a frying pan with 2 tablespoons of olive oil until it turns golden brown.
- Add the fried onions and boiled green lentils to the rice and mix. Serve with roasted fennel.
