Ingredients for Roasted Zucchini

  • 4 medium zucchini
  • 2 medium carrots
  • 1 onion
  • 4 tablespoons of olive oil
  • 1 tablespoon of tomato paste
  • 2 tomatoes
  • 1 teaspoon red pepper
  • 1 teaspoon of black pepper

Roasted Zucchini Recipe

Let’s prepare the zucchini and carrots by cutting them in julienne style (I cut them in this way to make the image different from the zucchini dish, you can also do it normally). If possible, fry the oil and onions in a frying pan until they turn pink. Let’s add our tomato paste to the roasted onions, fry until the smell is gone, add 1 tea glass of hot water and add the zucchini, spices and carrots. Close the lid of the pot and cook on low heat for 20 minutes. At the end of the time, let’s add the tomatoes that we cut into cubes and cook until our vegetables are soft.

If you want, you can also add tomatoes from the beginning without using tomato paste. You can serve it with garlic yogurt
