Ingredients for Sour Garlic Pumpkin (My Grandma’s Recipe)
- 1 medium pumpkin
- 3 medium onions
- 2 red peppers
- 4-5 pieces of green pepper
- 5-6 dried peppers (as decoration)
- Tomato paste
- Fame
- Salt (2 teaspoons)
- Black pepper, red pepper flakes, red pepper powder (1 teaspoon each)
- Olive oil
For the sauce;
- 8-10 cloves of garlic
- Vinegar
- Salt
Sour Garlic Pumpkin (My Grandmother’s Recipe) Preparation
Try the pumpkin, which we usually use in desserts, with garlic and vinegar. A different and delicious dish. I believe you will like it. You can serve it as a cold appetizer or consume it as a meal. The recipe belongs to my dear grandmother.
First, we cut the pumpkin in half and slice it like apple slices. We remove the cores of the long pieces we sliced and peel and wash them. Then slice the zucchini thinly.
While the zucchini is waiting to one side, we chop the onions in half rings. Add salt, black pepper, red chili powder and red pepper powder on it and mix it well with our hands. You can change the amount of spice according to you and if you don’t like hot, you can remove the red pepper flakes completely.
Then we wet the baking tray with a small amount of olive oil. We spread the onions that we blended on it. We spread the pumpkins on the onions and decorate them with chopped red and green peppers by removing the seeds. On the other side, we dilute 2 tablespoons of tomato paste with warm water (it will have a thick consistency) and add 2-3 tablespoons of olive oil and pour it over the zucchini with a spoon. We sprinkle 1 full tablespoon of flour on all the ingredients and put it in a preheated 180 degree oven and let it cook.
When the zucchini is close to cooking (ours took 45 minutes, but you can check it with a fork), we put the dried peppers on it and put it back in the oven. And we bring the oven to the grill part and let it cook. After 10-15 minutes we turn off the oven.
For our sauce…
We mix the vinegar and the garlic that has been passed through the garlic press with a little salt. When our pumpkins are warm, we walk on them. And our sour zucchini is ready 🙂
You can serve it warm or cold. Enjoy your meal!
