Vegetarian Ravioli

Ingredients for Vegetarian Ravioli

  • 1 cup of flour
  • 1 egg
  • half a glass of water
  • salt

  • 1 cup of jasmine rice
  • 1 onion
  • 1 celery
  • 2 leeks
  • 2 carrots
  • 2 tablespoons of olive oil
  • 1 cup of hot water
  • salt
  • black pepper

For sauce

  • 3 tomatoes
  • 2~3 cloves of garlic
  • 2 tablespoons of olive oil
  • salt
  • black pepper
  • 1 cup of yogurt
  • 1 grated carrot
  • 5~6 sprigs of parsley

How to Make Vegetarian Ravioli?

  • Take the flour in a dough kneading bowl and knead by adding water, egg and salt. Divide the dough into two pieces and cover them with a damp cloth. Wait 20 minutes.
  • Soak the rice in warm salted water for 20 minutes. Wash and drain with plenty of water. Clean and chop the onion. Clean the celery, leeks and carrots and mash them together with the onions.
  • For the sauce, heat the olive oil and add the vegetable mixture and sauté. Add a glass of water and salt. When the water starts to boil, add the rice and mix.
  • Cook on low heat until the rice water is absorbed. Add black pepper and sweeten. Take it off the stove and let it rest.
  • Roll out the dough meringues on the floured counter with a rolling pin. Cut the phyllo with a heart shape mold. Separate half of the heart-shaped dough you have obtained.
  • Divide the rice mixture in the middle of the half. Place the remaining hearts on top and press the edges so that they do not open.
  • Arrange the ravioli you prepared on a greased baking tray and bake them in a preheated 200 degree oven until they are browned.
  • Take the tray out of the oven, pour the hot water over the ravioli and sprinkle with salt. Return it to the oven and cook until the water has evaporated.
  • For the sauce, wash and grate the tomatoes. Peel and chop the garlic. Heat the olive oil in a small pan, add the garlic and sauté lightly.
  • Add tomatoes and fry. Sprinkle with salt and pepper and remove from the heat. Take the ravioli on the serving plate. Serve with parsley, grated carrot and yogurt.
