Ingredients for Zucchini Feta Cheese Pancakes

  • 1 medium green zucchini
  • 100 g crumbled feta cheese
  • 4 tablespoons of einkorn/buckwheat flour (can be tried with a different flour)
  • 1 egg
  • 2 tablespoons chopped parsley
  • 1 clove of minced garlic
  • cayenne pepper/black pepper
  • 1 tablespoon of olive oil

How to Make Pumpkin Feta Cheese Pancakes

  • Grate the zucchini and put it in a bowl. Add 1 tablespoon of salt and wait 30 minutes.
  • Squeeze the water thoroughly and mix well with white cheese, any kind of flour you want, eggs, parsley, garlic and chili peppers.
  • Add extra salt and/or pepper to taste.
  • Add olive oil to a pan and bring to medium heat. Add 1 tablespoon of the mixture and cook for 2-3 minutes from front to back until golden-brown.
